Meyers Lemon Tart

My Meyers Lemon Tree looks…awful. It’s nearly bald. But it did produce a few small lemons so I took it upon myself to tart some of them into a dessert. Here is the recipe I used:

2 small Meyers lemon cut into pieces
3/4 cup sugar
1/4 cup butter
1 tsp vanilla
2 eggs

A small pie shell (think 6 inch quiche shell) or make your own graham cracker crust.

Put all ingredients (except tart shell) into a blender and whirl like crazy!
Pour into tart shell.

Bake 40 minutes at 350 degrees (watch that the top does not burn).

It’s pretty good and a simple dessert. I liked it better with fresh whipped cream on top. Chocolate sprinkles were totally overwhelmed by the lemon flavor.
